Gluten-Free Cupcakes

With the cupcake craze going on, I've spent a good amount of time feeling sorry for myself and the fact that I cannot order cupcakes like every other person can. And I figured that if I was feeling this way, I couldn't be alone - other celiacs must be feeling the same pain. I couldn't find gluten-free cupcakes anywhere (at least that looked appetizing) so I decided that I'd take my cake mix and start selling ready-to-eat cupcakes. Gluten-free, of course!
I found some eco-friendly cups and spoons (they compost - for real! You can put them in your own compost pile and they will break down over a few months. Totally cool!) and layer the cupcakes in a cup with real buttercream frosting. I knew they were large (I'm making jumbo size cupcakes and am using 16 ounce cups) but I was quite surprised to discover that they weighed in at 16.5+ ounces each. Whew! Humongous! 1 pound of deliciously moist and sweet cupcakes. No more yearning for something you can't have. Now if I could just clone myself so I can order cupcakes from my other self and enjoy them w/out having to make them myself. Hmmm...
I've listed them for sale in etsy shop for right now and will be adding them to my site once I work out some shipping kinks.
